- Environment & Biodiversity: Oaxacan chocolate is arguably the most significant Mexican chocolate, prized by locals and part of daily life. The word cacao has been traced to the Olmec. The Maya continued the use and introduced this to the Aztecs who called it xocolatl, meaning ‘bitter water. Oaxaca doesn’t grow much cacao. Most of the beans come from Chiapas and Tabasco. That said, Oaxaca is one of the premier places in the world where the best of the best criollo is found.

Creation:
Take 2-3 Tbsp of it grounded/shaved and add to 6-8 oz of hot water. Traditionally, cacao paste is only made with hot water and some herbs. You can definitely add nut milk or sweetener if you desire!
